Kiritanpo: step by step
Freshly cooked rice is placed in a mortar and mashed until smooth.
Next, balls of mashed rice are kneaded onto Akita cedar skewers
Lastly, the tanpo is slowly roasted until golden and finished off with a sweet miso glaze.
